Does anyone have any advice to offer about creating Disaster Recovery Plans

This is a really complex question. I agree with both John and Michael.

I wouldn't go with Watchgaurd.
Sonicwall makes a solid product that would likely accomplish what you need.
If you want to go a step up, Checkpoint on Nokia Hardware, but that's probably a lot more than you need.

Thoughts on EMC Symmetrix storage systems?

I've used iQstor, Hitachi, EMC, Dell (which is really just re-branded EMC), and NetApp.
