There's definitely an adjustment period - new UI and the inherent differences of working on the web vs working on the desktop - but once you make the switch there's no going back.

Absolutely.
I'd agree SaaS implementations are much more straight forward than on-premises deployments. The need to plan and build (and then replan and rebuild) out the hardware and software infrastructure required, both indirectly and directly, for the application is removed. Is Salesforce.com trying to be an applications or platform vendor?

Definitely both.
Salesforce.com is a big player in cloud computing but the firm is still relatively small by revenue compared to the incumbents. They've got tons of room to grow and are taking steps to make sure they take full advantage of their potential.
