It is a sad reality that even the best security products exhibit security vulnerabilities that can be hacked. It is just as important to update and patch your firewalls, AV servers, and IPS systems as any other product. They rearely succumb to the random attacks that your Microsoft servers do but they represent a dangerous hole in your defenses.
One attack methodology is protocol "fuzzing". Basically the attacker sends thousands of malformed packets at the device and waits for a response that indicates an open door. There are commercial products available that are used by larger companies to test their security network devices. These *should* be used by the security vendors themselves on a regular basis.
Breaking Point and Mu Dynamics are two vendors that provide testing tools for security devices.
As Richard is saying, there are loads of things one should watch out for.
Not updating firmware is a huge threat because as soon as someone finds a way to exploit the set firmware, your system is in danger; untill you update and remove the threat again. In my opinion hardly any systems are 100% safe, but there are safetymeasures that definitly will stop 99.9% of attacks.
New ways to get around the defence is also widely used. Getting the user on the inside to install various software, or browse websites with harmfull content/code.
Security is definitly an interesting question!
