Does the 'one page resume' rule still apply?
I have a lot of information that is very hard to limit to a one page resume. Is it still unacceptable to have a multi-page resume? Why or why not?

No.
We live in a world of social media and boolean searches. If you have a one page CV you need to ask yourself are you portraying yourself fully and accurately? What information are you removing from the CV to trim it down?
Of course it is subjective and if I got a 10 page CV from someone who has worked in McDonalds for 6 months I am not exactly going to be enthused. However If I am dealing with someone with 20 years experience and they have cut off half there CV and I am searching on LinkedIn or my internal database for them they may have missed out information that is pertinent to the vacancy. I won't find them. They won't get the job.
The easy answer is write a CV for the Job you wish to apply, do not have a generic CV that covers every vacancy. Make sure it fits the role, and highlights your experience the vacancy requires. If that makes your CV 5-6 pages long then so be it.
I would rather read a 5 pager than a 1 pager. It shows some thought was put into the CV.
