the only real source of the truth after viewing all the demos is to talk to customers of each of your short-listed ERP vendors. Demos are scripted to show the best side of the product and hand picked customer references will most likely just speak the "Company Line". You should ask for additional customer references after the few hand-picked ones are given to you.
