How common is it to change carriers?
How often do people generally change their mobile carrier? Is it more common to see people switching carriers or sticking to the same one?

Generally, I see people stick with their carrier of choice unless their is a very compelling reason to change. In my experience, service price is not a very compelling reason to change providers, especially when you can call the carrier and usually get some sort of competitive reduction in cost.
On the other hand, an excellent example of a compelling reason to change was the exclusive release of the iPhone on the AT&T network. I saw lots of clients abandon their carriers and go to AT&T in order to get the phone they wanted. Ironically, I have seen many of these same clients now abandon AT&T and the iPhone because they were convinced that they could get more reliable coverage from Verizon and an Android device.
In a nutshell, most of my clients keep their carriers for 5-10 years, unless they have a good reason to change.
