How do you test a new OS for business approval

What steps are people taking to test the new OS is suitable in their environments? How long do you run-in a new OS before you give it corporate approval? Is there a standardised way to see that the desktop passes muster? For bonus points on the question though, does it matter what OS we are running? The end-user experience is smoother under the newer OS but does it really affect our day to day productivity or does it make anything possible we couldn't do with earlier versions?

A lot of questions here that can be better answered by others, I did however want to mention that testing out a new OS through virtualization (ie. VMware Desktop) really helps in the testing and evaluation phase so that a group of users can try out the new OS while being assured that their previous setup is still intact.
