And if so what services are/have you looked to replace with Open Source solutions?
Not so much interested in the software/technology used, but instead I'd like to focus on the actual services replaced or enhanced with Open Source. Are we as an industry still leery of Open Source communities?

I know of some customers (government) who use open-source document management system (Alfresco).
