As a recruiter, what are some of the things to AVOID talking about with a potential candidate?

My advice most simply is anything not related to the job. You don't want to date them you want to employ them.
I value information that gives me a sense of how they fit into the culture of the organization as well as their ability to do the job.
Things to avoid are politics or political views, their social life or yours, or other areas that start leading into "intimate" topics.
Mark's point is powerful - stick to the job criteria and avoid questions or discussions relating to things that you might have in common with the candidate which are not job related. So, for example, if someone has identified that they are ardent fans of Manchester United (or some other sporting team depending on where you are based) try to steer clear of a discussion about that. It will feel good but may cloud your judgement in a subtle way.
There are the usual, illegal ones that come to mind: marital status, sexual orientation, religion.
And, I've had recruiters break each one in a call with me.
