What are the best Voice Over IP systems available for a 75 person office?
We’d need about 80 phones in total – 75 desk phones, and 5 conference room phones. We’d like to have features like voicemail, auto attendant, after hours answering, call forwarding, etc. We’d also like to find a system that has a very easy web-based UI so that employees can manage their own voicemail & forwarding settings. What systems do you think would meet our needs?

We have 50 in-house users and 15 remote home offices all connected to our Zultys MX250 VoIP phone system. This system is extremely easy to configure from an admin perspective and users can easily access their settings from any phone or via client software that can access the system from anywhere. They can even use their laptops as phones using the softphone in the client ap. The system includes instant messaging, presence, and a host of other features. It even has video and audio conferencing. It is also very cost-effective.
If you're looking just for an IP-based phone system, Zultys, as noted above, should be a good choice. However, many other vendors can do the job just as well, such as Mitel, Shoretel or Aastra. If you're working with a VAR, am sure they can give you good advice, and you should complement that with the Focus buyers guides here!
It's not my place to recommend one vendor over another, but I would suggest you take this opportunity - it could be a key inflection point for your business - to consider all the options out there, and how well each of them speaks to your business objectives. If your only objective is lowering telecom costs, the choice will be pretty easy. However, if your objectives are broader and more strategic, then you should give careful consideration not just to hosted offerings, but also to integrated solutions that go beyond VoIP. These days it's getting harder to think about VoIP/telephony in isolation from all the other communications modes your business depends on. With IP, they can all be integrated, and with that comes a richer set of tools that can make your business - and each employee - more productive.
