The questions isn't clearly worded, so you'll have to think more about what you're asking, and then I'll be happy to answer further. In short, lots can be done with VoIP, and I'm the right guy to answer this question. VoIP is good for telephony, of course, but it's also very good for voice-enabling other applications - that's actually where the most interesting things are happening.

SIP is definately the way to go. It is "the" open standard for voice. Many premise systems claim they support SIP end-points, but it is often with a limited feature set. If the system can provide the same full feature set on any SIP device it is native SIP. In many cases such as Cisco they use their own proprietary protocol to provide a full feature set but have limited functionality on a SIP endpoint. If you want full featured native SIP from a Tier 1 premise provider take a look at Siemens. They won VoiceCon Best in Show this year!
