VoIP - Voice over IP is a broad term referring to any method of voice transmission using IP networks as a medium.
For example Skype is VoIP, ICQ, Google and some other messengers have VoIP plug ins

SIP trunking is a method of delivering voice services from PSTN (Public Switched Telephony Network) to SIP endpoints (User Agents) while limiting number of concurrent connections for a particular termination point (user's office)

SIP protocol itself has no internal limits and can connect unlimited number of endpoints if they can reach each other over IP network.
