I recently read about ioSafe's fire-resistant hard drive offerings, and the idea intrigued me. Which other vendors offer "disaster-proof" hardware... specifically servers?

Fire "resistant" is not the same as fire "proof".
There are different technologies that can be used to make highly fault resistant equipment. One such vendor is: http://www.stratus.com/
No one will claim that their equipment is disaster proof, but depending on the type of disaster you are concerning about the most, there exists some technology to mitigate the potential problem. You'll need more than just a fire resistant harddrive or case, however. Such planning must extend to the facility in which the data is stored, etc.
