A couple of market research firms track this space: Dell'oro Group (http://www.delloro.com) and Infonetics (http://www.infonetics.com). Cisco has been the market leader but that may have changed with Avaya picking up Nortel's business recently.
As a sidenote, these market research companies are focusing less on the traditional hardware (VoIP) switches and more on the software that runs on top of them (unified communications solutions). Like other industries, the money seems to be coming from software and integration services and less from the underlying hardware.
