What is the payment breakdown when a song is sold on iTunes?

The breakdown is approx. 70% to the publishing party (label/producer/writer) and 30% to Apple. How the song's 70% is split between the music label/publisher is up to the contract on the work in question.

The label-driven ventures have all crashed and burned. (I think)

Today, they simply try to gleen royalties from those services that have survived and prospered.

Yes and Yes. Anything is possible as data is stored in the cloud and highly available to tablets, smart phones and the rest. more

Disagree. Cloud based services are nothing new and, for a variety of customer, technical or legal reasons, haven't really worked to date. It they threaten to work now, Apple has the resources and DNA to make it happen for iTunes.
